Baking for my Brother's Wedding!

Lunar/ Chinese New Year is looming, so let the prep begin!

These were specifically crafted for a wonderful "Wall of Rice" kamayan-style potluck at @hackneychinese hosted by the lovely Jenny @celestialpeach_uk

Though the brief suggested savoury items, I wanted to offer something to wish everyone good fortune and bring a smile/ sweet start to the dragon year 🐲

Made from the vanilla bean cake scraps of the wedding cake with the addition of mini dark chocolate chips for texture and flavour #nowastage #upcyclefood
Using coloured tempered chocolate to coat and a little green leaf - I made these on a whim at 2am! So happy with them (although, the green shade is wrong) ☺️✨🍊

Today, I also broke the 4th wall in the Asian community because I was given the big compliment "it's not too sweet"... Despite using buttercream AND *cue drumroll please*... WHITE CHOCOLATE! 🤯🤯🤯 Talk about balance makes everyone happy!
I'm so so pleased this test idea was approved by everyone 🥰🥰🥰

How I made the Cherry blossom wedding cake 🌸

Wedding cakes take patience, time and lots of effort but everyone who makes them knows how rewarding it is.
Granted that every baker has their own system for efficiency, but sometimes slower processes such as drying fondant still takes time regardless how fast you are... So enjoy the whole journey!

How I made the Cherry blossom wedding cake 🌸

Wedding cakes take patience, time and lots of effort but everyone who makes them knows how rewarding it is.
Granted that every baker has their own system for efficiency, but sometimes slower processes such as drying fondant still takes time regardless how fast you are... So enjoy the whole journey!

Today I had the sweetest honour of baking a bespoke cherry blossom wedding cake!! It was an absolute pleasure and I had so much fun making this!

The brief was really open for interpretation: vanilla sponge with vanilla buttercream with cherry blossom and a specific Kirby figure. They gave me full freedom to explore and approach the design however I wanted, so I did this! Hope the couple were happy with their cake 😄 🌸🌸🌸

I made the cherry blossoms from fondant (they're edible, but not the stamen) also the best to manipulate colour hues and shapes. This was my first time ever making cherry blossoms -believe it or not- but I think I did a pretty decent job - although, I'm extremely disappointed in the fuchsia colour powder as it didn't blend out, so I won't be buying this one again.

KIRBY IS MY ALL-TIME FAVOURITE CHARACTER! So I was stoked to have the chance to make this for the couple - again, it's made with fondant which holds colour so well and is super easy to shape. 💕💕💕

My favourite part was the end assembly, bringing the idea to life and attaching the branches. So rewarding to see everything come together, makes it all so worth it 🥰🌸

Galaxy/ Astronaut themed party 🎉👨🏻‍🚀🌌

Yesterday, I had the fun chance to bake for a little 5y/o themed birthday party and it was such a fun process!

From a gigantic dome cake to planet cupcakes and smiley biscuit pops, there was something for everyone.
The huge dome cake contained 4x10" layers of (my favourite) chocolate buttermilk sponge generously paired with vanilla buttercream. To achieve the round dome shape, gently cut the top edges, remembering that you can achieve further smooth roundness from the outer buttercream layer too.

The most exciting part was the colouring process! Getting the right shade of blue and blending them together; I just LOVE seeing that. For the decoration I used a mixture of sprinkles, edible glitter and white cocoa butter. 🌌🌌🌌🌠🔭

It's always fun to bake and try new things, I hope the birthday boy thought this cake was outta this world! 💫💫💫

Each lion holds its own symbolic meaning:
● Peanut & Sesame [Gold]: Roasted peanuts are lightly
crushed with toasted sesame seeds for a nutty, buttery and
aromatic shortbread. Completed with a touch of edible gold
for that extra elegance. In Chinese culture, peanuts are
considered to symbolise longevity and sesame seeds good
fortune.

● Berries [Red]: The colour red is a symbol of prosperity and
happiness in Chinese culture, particularly during the New
Year. Fruits symbolise new beginnings with sweet fruits
wishing those a sweet year ahead - so with this, I’ve
included sweet red fruits such as strawberry and raspberry.

● Brown Sugar & Chinese Red Date [Yellow]: A play on
flavours from the traditional Nian Gao 年糕. Typically made with
brown sugar and Chinese red dates [jujube], I’ve
incorporated this into a shortbread version with chewy chunks of
date and a mild caramel note. The words 'nian gao 年糕’
sounds like 'year high’ meaning prosperity and starting the
year on a high note.

There will be a few new items this year with the classic lucky orange bun coming back out for LNY/CNY. Stay tuned! 🍊🧧🍊🧧🍊

Thomas & Friends birthday cake 🥳🎂🚂

This cute cake was specially made for a birthday boy who loves Thomas the Tank Engine 🚂

I rarely make themed cakes because of the novelty aspect, but nostalgically I love them! It's literally the opposite style to what I usually make, but it's always fun to try new designs and play with techniques I haven't done in a long time.
When I was around 12y/o, I would take blu tack from my Parent's takeaway and make all sorts of objects: spring rolls, 3D roses, animals, cars, anything my imagination allowed - how normal children played with playdoh, I played with blu tack. So, I've always loved to create and mould things by hand!

Achieving the right colour was the most important yet difficult process. In graphic design, I was taught that if you remove all the information (text, characters) and just look at the blocked shapes, if you're able to distinguish the brand immediately, that shows how powerful the marketing and branding style is.
To get the colours very vibrant, popping and as accurate as possible, I used my favourite colouring brand @sugarflaircoloursltd, I think their extra range is incredible!!

The cake was really fun to make, but what's more, the birthday boy loved it! Thanks Mumma Fiona for DM-ing me the aftermath photo. I'm always grateful to have these cake opportunities and be able to bake for your special occasions! Such an honour 🙌🏻🎈🎉
